How to Boil Water: French Chicken Broccoli Supreme

French Chicken Broccoli Supreme

Ingredients:
1 lb fresh broccoli, broken into pieces and steamed for 2 minutes
3 cups cooked chicken breasts, broken into small pieces -- I used a rotisserie chicken
3 cups Grated Cheddar Cheese (divided)
2 tubes of Ritz Crackers
1 1/3 cups melted butter (divided)
1 tablespoon poppy seeds
1/4 cup Cornstarch, dissolved in 1/2 cup cold water
1/3 cup chicken broth
1/4 tsp. salt
1/4 tsp. pepper
2 cups milk

Directions
Steam broccoli for two minutes. Layer chicken in a greased 13x9 pan then put broccoli in pan with chicken with finished.

Dissolve the cornstarch in the cold water. Melt the butter and divide - 1/3 cup to go to the sauce mixture and 1 stick to go with the Ritz cracker topping.

Combine melted butter, cornstarch, chicken broth, seasoning and milk over medium heat. Stir until the sauce has thickened. Turn the heat down on low and add 1 1/2 cups of grated cheese. Stir until melted.

Put Ritz crackers in a ziplock bag or a food processor to crush (but keep the pieces a little bigger). Then add crackers into the stick of butter and combine.

Pour cheese mixture over broccoli and chicken. Add another 1 1/2 cups of cheddar cheese on the top of the mixture. Then top with Ritz crackers before putting in the oven.

Bake at 350 degrees for 30 minutes.

But let's just say that this was delicious. We both really liked it. I should have planned it better and had rolls. But I pulled out some bread and butter. It was really good. I do want to add that poppy seeds are in the ingredients list but I couldn't find them in the grocery store and I didn't want to spend that much time so I just went without.

Yummy!
