Ingredients:
6 tablespoons grated Parmesan cheese
1 1/2 cups Prego Traditional Italian Sauce or Organic Tomato & Basil Italian Sauce
Vegetable cooking spray
6 skinless boneless chicken breast halves
1 1/2 cups shredded part-skim mozzarella cheese
Directions:
Spray a skillet with cooking spray and heat over medium-high heat. Add the chicken and cook for 10 minutes or until well-browned on both sides.
Stir in 4 tbsp of the Parmesan sauce into the Italian sauce.
Pour the sauce mixture over the chicken, turning to coat with sauce. Reduce the heat to medium. Cover and cook for 5 minutes or until the chicken is cooked through.
Top with the mozzarella cheese and remaining Parmesan cheese. Let stand for 5 minutes or until cheese melts.
A few notes:
*I'm not comfortable cooking meat. I have never really done it all that well so I chose not to do it with huge pieces of chicken. Maybe next time I can work my way there.
*I used a little too much sauce, so I scooped some of it out but it was still too much.
We used to have it with spaghetti, but instead of doing that we had this meal with Saucy Asparagus.
Ingredients:
1 can (10 1/2 ounce) Campbell's Condensed Cream of Asparagus Soup
1/2 cup milk or water
2 pounds asparagus, trimmed or 2 packages (about 10 ounces each) frozen asparagus spears, cooked and drained
Directions:
Stir the soup and milk in a 2-qt saucepan over medium heat. Cook and stir until the mixture is hot.
Pour the sauce over the asparagus and combine.
A few notes:
*I learned that Campbell's Condensed Cream of Asparagus Soup is hard to find - in fact impossible. I looked at two different places and still couldn't find it and didn't really want to look anywhere else, so I chose Campbell's Condensed Cream of Onion. It seemed like an okay substitution.
The asparagus was so-so. But I tried asparagus for the first time. I had never had it before and it wasn't bad surprisingly enough. The chicken was good though and definitely going in the book of our favorite recipes. Only next time I think I'll do like we used to and make it with spaghetti and toast. It was basic meal but it was good.
