How to Boil Water: Individual Sicilian Meat Loaves

Welcome back! Anyone else wondering where I disappeared to? My cooking has been spotty at best lately but I have been cooking. Just been busy and all that comes with the new year. But I'm back now. I hope you all had a wonderful new year, and I truly hope you guys enjoy these recipe and maybe even try a few. Some are definitely worth it.

Ingredients:
1 egg, lightly beaten
1 14-ounce jar garlic and onion pasta sauce
1/4 cup seasoned fine dry bread crumbs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
12 ounces ground beef
2 ounces mozzarella cheese or 2 sticks mozzarella string cheese - I used string cheese which I had from a really jacked up mozzarella sticks I made New Years' Eve. I know I didn't share that, but trust me wasn't worth it. I'm still looking for that great mozzarella stick recipe. 
4 thin slices prosciutto or cooked ham
1 9-ounce package refrigerated plain or spinach fettuccine - I didn't use this part because it's technically a side to go with it. We actually had Butter-Glazed Carrots and Cottage Cheese with our meal instead.

Directions:
Preheat oven to 400. In a medium bowl combine egg, 1/4 cup of the pasta sauce, the bread crumbs, salt, and pepper. Add ground beef, mix well.

Cut mozzarella cheese block into four 2 1/4 x 3/4 x 1/2-inch logs or cut each string cheese stick in half crosswise. Wrap a slice of prosciutto around each cheese log. Shape one-fourth of the ground beef mixture around each cheese log to form a loaf. Flatten the four meat loaves to 1 1/2-inches thick and place in a shallow baking pan.

Bake loaves, uncovered, in the preheated oven about 20 minutes or until internal temperature registers 160 on an instant-read thermometer. Meanwhile, prepare fettuccine according to package directions.

Arrange meat loaves over hot fettuccine. Spoon sauce over top and if desired, sprinkle with finely shredded Parmesan cheese.





So here's something that I know about myself but don't really think about sometimes. I just don't like meat. I've never been a big fan of it, so cooking a meal like this probably was not the smartest move. I definitely won't be cooking this again anytime soon. But I would recommend it to those of you who like meat loaf and looking for something a little more interesting to spice up the plain ol' original meat loaf. Good luck...
