Dinner Brought To You By: Taste of Home Cookbook
Here's What You Need:
4 medium red potatoes, cubed
6 tablespoons butter, cubed
2 tablespoons olive oil
1/2 cup all-purpose flour
1 pound grouper or other lean fish, cut into 3/4-inch pieces
2 cups sliced fresh mushrooms
1/2 chopped celery
1/4 cup chopped onion
3 garlic onion, minced
4-1/2 teaspoon lemon juice
Salt and pepper to taste
Here's What You Do:
In a large skillet, saute potatoes in butter and oil for 8-10 minutes or until lightly browned.
Place flour in a resealable plastic bag. Add fish, a few pieces at a time; shake to coat. Add to skillet. Cover and cook for 4 minutes, stir occasionally. Add the vegetables and garlic. Cover; cook 4-6 minutes longer or until fish flakes easily with a fork. Sprinkle with lemon juice, salt and pepper.
I'm not a big fan of fish, but this one is great. It doesn't taste like fish at all. It's full of vegetables. It's all kinds of delicious. I think my only advice in making this meal is to remember to cut up the fish before cooking it. I always forget. It's not a huge deal if you forget but it's a bit annoying. The fish flakes and shreds easily so it doesn't stay in chunks regardless.
This is one of our new favorites. It's easy to make and delicious. I seriously recommend this meal!
