On the Kid's Table: Mashed Potato Cakes

Here we are again with another kid friendly recipe. I am always looking for ways to get more veggies into Addison's diet. Even more I am looking for creative ways to get those veggies into her meals, letting her try new foods in new textures. I should mention that I don't cook a separate meal for Addison at dinner. She eats what we eat. Of course there are some exceptions. She doesn't usually have pizza with us. And there are just some foods that are just too tough for her to eat right now - like steak, asparagus, etc. So sometimes I have to come up with something different. But mostly when I am able to stretch my creative cooking legs with it comes to her food is at her lunches. I like to find recipes that I can make ahead - usually when Rob is home and taking care of her - and freezes well.

Here's What You Need:
2 cups mashed potatoes
1/4 cup parmesan cheese
1 egg, whisked
7 tablespoons flour, divided
butter or oil for pan-searing

Here's What You Do:
Place mashed potatoes, cheese, egg, and 3 tablespoons flour in a bowl and stir to combine.

Take a scoop of the potato mixture and form into patties.

Place the remaining 4 tablespoons of flour on a plate.

Lightly coat the potato patties in the flour.

Heat a thin layer of the oil or butter in a large saute pan over medium heat.

Cook the potato cakes for 3 minutes on each side for a total of 6 minutes.

Serve as is or with accompaniments.











**After step 2 (scooping the potato mixture mixture and forming patties), place patties on a baking sheet and place in freezer for 30 minutes then place par-frozen patties in a Ziploc bag and freeze up to 4 months. When ready, defrost in fridge for 24 hours and follow the rest of the steps.



I made the mashed potatoes, but you could probably get away with buying already made mashed potatoes if you want. I don't know why that would be an issue. It doesn't seem to say to it one way or another, so whatever fits your fancy is the way to go.

All and all it was easy to make. The hardest [and longest] part was actually making the mashed potatoes because you have to peel, cut, boil, wait, then mash. But still it's not exactly rocket science.

Addison was mixed about how she felt about this cakes. Rob liked them. Addison made a face when she tried them, and didn't eat much. But Addison has been in a bit of a rebellion against eating dinner lately so that probably had more to do with it than anything else. But I don't give up so quickly. I think I read somewhere that it takes up to 15 times for a kid to try a food before they will go either way on liking or not. So one down - 14 to go...
