So I decided this is where I wanted to start. I wanted to make this bread because it wasn't overly complicated and it looked delicious, plus it would be a good addition to breakfast. How is that not a win?!
Brought To You By: Frugal Mom Eh!
What You Need:
1 cup white sugar
1/2 cup salted butter
2 eggs
1 tbsp vanilla extract
1 cup milk
2 cups all purpose flour
2 tsp baking powder
2 cups blueberries
Here's What You Do:
Preheat oven to 350°. Grease a 9" loaf pan.
Cream together the butter and sugar. Add the eggs, vanilla, and milk beating well. Add the dry ingredients and beat until well combined.
Add blueberries and mix by hand gently with a spatula being careful not to crush the berries.
Pour batter into loaf pan and bake for 60-75 minutes.
Allow to cool in pan for 10 minutes before removing to finish cooling.
Tip:: Reserve a small handful blueberries for after the batter is poured into loaf pan. Gently press into the top to make the loaf prettier.
First of all this was super easy to make. Also I didn't go along with the tip to make a prettier loaf. I just poured all the berries in and called it good. I used frozen blueberries and mixed them with a little flour in order to help them not lose their form while baking. But while it took time to put together the blueberries started thawing and my loaf had a lot of added purple in it. Oh well. The first time I make a recipe I usually don't care about pretty too much but more about delicious.
And it was delicious. Never mind that it's all a little purple-gray all over. Apparently I haven't mastered the skill to not get the blueberries to bleed. Oh well. It was good and that's what matters. It's just something delicious to add to our breakfast for a few days.
