Ingredients:
margarine or butter
small onion, finely chopped
Gold Medal all-purpose flour
chopped fresh parsley
salt
pepper
milk
Progresso chicken broth
chopped fresh or frozen (thawed) lobster
Instructions:
Melt butter over low heat. Cook onion in butter. Stir in flour, parsley, salt and pepper. Cook, stirring constantly. Remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Stir in lobster. Heat to boiling; reduce heat. Simmer about 3 minutes, stirring frequently, until lobster is white.

Now we all know I love love love lobster. It seems weird because I am so picky but this is something I love. We are definitely not in Maine and this is definitely not a lobster roll. I have never had another lobster meal but now I have.
Rob tried the meal first which is kinda normal every time we try something new. Then I always ask him what he thinks before I try. I think we were both doubting this meal but much to our surprise it was actually really good. The lobster almost melts in your mouth. The soup with the broth, milk and butter add an interesting taste.
This will definitely be a repeat recipe. It was so delicious. And so easy to make. I loved it!
