Ingredients:
2 1/2 cups multigrain rotini pasta
2 cups grape tomatoes
1 (6-ounce) package baby spinach
4 ounces fresh mozzarella cheese, cubed
*Italian Dressing
1/4 cup red wine vinegar
2 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh oregano or fresh basil
2 tablespoons extra-virgin olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 garlic cloves, minced
Directions:
Cook pasta according to package directions, omitting salt and fat. Rinse with cold water; drain.
Meanwhile, prepare Italian Dressing. Combine all the Italian Dressing ingredients, stirring with a whisk. Then combine with tomatoes.
Add pasta and spinach then top with mozzarella.
This meal was good. I really enjoyed it a lot. It would be good in the summer when you want something light. But it was pretty good now. You can definitely add a protein as your main dish and use this as a side dish. But it's pretty good by itself.
