How to Boil Water: Chicken Noodle Soup

If you want a super simple, easy, home-cooked American meal then you should definitely keep reading. I made homemade chicken noodle soup tonight and it was so delicious! So I'm gonna make this short and sweet (especially considering my last How to Boil Water was crazy long!), so here was go.

Ingredients:
4 1/2 cups chicken broth - I was actually short 1/2 cup, but live and learn and make sure I have enough broth next time!
1 cup chopped onion (1 large)
1 cup sliced carrot (2 medium)
1 cup sliced celery (2 stalks) - I actually used more than 2 stalks so just a heads up. 
1 teaspoon dried basil, crushed
1 teaspoon dried oregano, crushed
1/4 teaspoon ground black pepper
1 bay leaf - I forgot to get this, so I obviously didn't use it, so it's apparently not essential, but I think it might be better with it.
1 1/2 cups dried medium egg noodles
2 cups chopped cooked chicken or turkey - I used chicken. I actually brought a rotisserie chicken yesterday and I  used that, delicious and so so easy

Directions:
In a 3-quart saucepan combine broth, onion, carrot, celery, basil, oregano, pepper, and bay leaf. Bring to boil; reduce heat. Simmer, covered for 5 minutes. Stir in uncooked noodles. Return to boiling; reduce heat. Simmer, covered for 8 to 10 minutes or until noodles are tender but still firm and vegetables are tender. Discard bay leaf. Stir in chicken; heat through. To serve ladle soup into bowls.





I think this was a perfect last 'How to Boil Water' of the year. This was seriously so delicious. Beat that Campbell's! : ) It was so easy to boot. Well, I hope you have enjoyed the recipes and series this year and I look forward to picking it back up next year and trying more recipes and figuring out ways to shop and save money and all that fun stuff that comes with growing up and having a tight budget.
