But YET we made dinner tonight. Okay, well I made dinner tonight - Rob did watch the food while I ran to the bathroom at one point and had to deal with a timer going off so he definitely helped. Stella just slept on the couch. Anyway, we cooked. We had a healthy-ish meal this evening, so here it is....
Ingredients:
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions:
Cook fettuccine according to package directions.
Meanwhile, for sauce, in a 3-quart saucepan melt butter. Add cream, salt, and pepper to saucepan.
Bring to boiling; reduce heat. Boil gently, uncovered, for 3 to 5 minutes or until mixture begins to thicken, stirring frequently.
Remove from heat; stir in the 1/2 cup Parmesan cheese. Drain fettuccine; add to hot sauce. Toss to coat.
If desired, sprinkle with additional Parmesan cheese.
So since we are feeling well, I won't add much. But I will say that I still prefer red sauce, but otherwise...
