This was definitely a good Halloween meal. Whenever I think of Halloween, I think of chili but this is the closest I could get (I already had everything for this meal). It was a good meal for a cool evening, spent home, answering the door, and doing nothing.
Ingredients:
1 pound beef stew meat, trimmed and cut into 3/4-inch cubes
1 can (14 1/2 ounces) diced tomatoes, undrained
1 cup sliced carrots
1 cup cubed potatoes (1 1/2 inch cubes)
1 cup frozen cut green beans
1/2 cup chopped onion
1 package McCormick Slow Cookers Vegetables Beef Soup Seasoning Mix
3 cups water
Directions:
1. Place beef and vegetables in slow cooker
2. Mix Seasoning Mix and water until blended. Pour over beef and vegetables. Cover.
3. Cook 8 hours on LOW. Stir before serving.
**For best results, do not remove cover during cooking.
It was pretty good actually. It had a bit of a kick to it, but I even still liked it. The meat was nicely tender and easy to chew (which is good for me since I have never been able to chew anything but super tender meat). I highly recommend trying this meal because it is super easy and pretty dang good! Go now and give it a try. Scoot, scoot!
