I was looking for easy meals especially with Thanksgiving right around the corner. And what is easier than a good ol' fashion crock pot meal. I found this one on The Crockin' Girls website (click here for the original recipe).
Ingredients:
1/2 cup Miracle Whip
2 tablespoons minced garlic
1/4 cup Parmesan cheese
4-6 tablespoons lemon juice
4-6 tilapia fillets, thawed or frozen
1 bundle of asparagus
parsley flakes
cooked rice
Directions:
1. Mix first 4 ingredients together in a bowl
2. Dollop a spoonful of cream sauce onto each sheet of foil (will need a piece of foil per fillet) and place the fillet on top.
3. Top fillet with divided asparagus.
4. Fold the sides of the foil over the fish then fold the ends. The fish and asparagus should be completely wrapped up in foil.
5. Place packets in slow cooker -- it's okay if they are stacked on top of each other.
6. Cover and cook on HIGH for 2 hours if fish is thawed or cook on HIGH for 3 hours if fish is frozen.
I have always liked tilapia, which is weird because I don't like fish. I hate the smell. I hate the texture. I hate the taste. But tilapia I have been okay with....until this meal. It just smelled fishy. And it definitely tasted fishy. I don't know if it was the way it was cooked or just this batch of fish is just fishy (that's a weird statement). So I didn't like it because I wasn't crazy about the fishy-ness of it. I did like the cream sauce, so I was thinking that might be good with chicken. The asparagus was kind of tough however.
This meal was much more of a dud then a success, but hey we tried something new and I actually cooked, so at least there's that!
