On the Kid's Table: Applesauce Muffins

Just like with the Zucchini Muffins, I was not sure if this was the right place for this recipe. Weirdly enough, I made this recipe before the zucchini muffins but this one just never ended up here. Well, now it has. We are a fan of muffins around here. They are easy to make. Delicious to eat. Great for breakfast. Although I made these for Addison for breakfast, these are definitely not just for the munchkin....


Breakfast Brought To You By: The America's Test Kitchen Quick Family Cookbook

Here's What You Need:
2 1/2 cups all-purpose flour
1 1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/4 cups applesauce
1 cup plus 1 1/2 teaspoon sugar
10 tablespoon unsalted butter, melted and cooked
2 large eggs
1 teaspoon vanilla extract
1/2 cup walnuts, chopped

Here's What You Do:
Adjust the oven rack to middle position and heat oven to 375 degrees. Grease 12-cup muffin tin.

Whisk flour, baking soda, cinnamon, and salt together in large bowl. In separate bowl, whisk applesauce, 1 cup sugar, melted butter, eggs, and vanilla until smooth. Gently fold applesauce mixture into flour mixture with rubber spatula until just combined; do not overmix.

Using greased 1/3-cup measure, portion batter into prepared muffin cups. Sprinkle walnuts and remaining  1 1/2 teaspoon sugar over top of muffins. Bake until golden brown and toothpick inserted into center comes out clean, 16 to 18 minutes, rotating pan halfway through baking. Let muffins cool slightly in pan before removing. Serve warm or at room temperature.









The kid likes food. Food all all kinds - well except for eggs. She doesn't really like eggs, I think it's a texture thing. But she definitely doesn't have complaints about muffins. They were easy to make. They were delicious to taste. They made it into our favorite recipes.
