Here's What You Need:
2 cups all-purpose flour
1 cup brown sugar
2 tsp. baking soda
2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. ginger
1/8 tsp. allspice
1/2 tsp. salt
2 cups grated zucchini
1 apple peeled, cored and grated
3 eggs
2 tsp. vanilla
1/2 cups unsweetened apple sauce
1/2 cup vegetable or canola oil
Here's What You Do:
Combine the first eight ingredients in a large bowl (the flour, brown sugar, soda, and spices). Stir in the grated apple and zucchini.
In another bowl, beat the eggs, vanilla, apple sauce, and oil. Stir into the flour mixture until the batter is just combined. Spoon into greased muffin cups, filling to the top. [Side Note: If you are using muffin liners you may need to spray with cooking spray to prevent the muffins from sticking to the paper.]
Bake at 350 degrees for 20 minutes.
They were easy to make overall. I had never shredded an apple or zucchini before, so that was a new one. But using a cheese grater made it super easy and fast.
Muffins are actually pretty easy to make and delicious. They are a fast breakfast food that mixes well with fruits and milk in the mornings. It's an easy way to get started without a lot of work. I'm working on getting protein into our breakfasts, but right now we are on the right track. We have some veggies in our grain (muffin), we have fruits, and we have dairy. We are just shy of well-balanced.
I highly recommend these muffins. Not just for kids but also for adults. These muffins have made our favorites, and should definitely be on yours too.
