On the Kid's Table: Hidden Veggie Mac and Cheese

A favorite around here....

Here's What You Need:
1 1/2 cup elbow noodles
1 tablespoon butter
1 tablespoon flour
1/2 cup milk
1/2 cup summer squash puree
1 tablespoon cream cheese
1 teaspoon salt
Top with shredded cheddar cheese (1/4-1/2 cup)

Here's What You Do:
Cook elbow noodles according to package directions and drain.

In a large skillet, melt 1 tablespoon of butter. Add 1 tablespoon of flour and mix until thick and bubbly (but not burned!). Add 1/2 cup of milk and stir until it begins to bubble again. Add 1/2 summer squash puree, and stir until fully smooth and mixed in. Add cream cheese and mix until smooth. Add salt.

Add the cooked macaroni to your thickened cheese sauce. Top with shredded cheddar.

I made the summer squash puree. I preheated the oven to 400 degrees, cut the squash in half, put it in a rimmed baking sheet with just about an inch of water and let it go for about 40 minutes (until the skin is wrinkly). Then you let cool so you can handle. Scrape out the middle, put it in a food processor with a little water or milk and blend until smooth. You don't want it too thick, but you also don't want it too runny, so you have to do what you think is best. I used a 1/2 cup of the squash for this recipe then finished scraping out the rest, put them in freezer bags, labeled them, laid them flat in the freezer and let them freeze then I could easily store them standing up and out of the way. All I have to do when I want to make more is defrost and I'm good for more mac & cheese goodness. (I was able to freeze three bags and made one, so that is four different mac & cheese makings. Delicious!





I will admit that I love this one too. I'm a fan of box macaroni and cheese, but I didn't want to start Addison out on it. We haven't had box mac & cheese in forever anyway, so why not try a new homemade one. And I have looked no further for a mac & cheese because I love this one, it's easy to make and even better, Addison loves it too!

Easy and so much healthier than the box version!
