Here's What You Need:
4 boneless, skinless chicken breast halves (4 ounces each)
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup butter, cubed
1/4 cup white wine or chicken broth
1 tablespoon lemon juice
Here's What You Do:
Flatten chicken to 1/2-inch thickness. In a large resealable plastic bag, combine the flour, salt and pepper. add chicken, one piece at a time and shake to coat.
In a large skillet, brown chicken over medium heat in butter. Stir in wine. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until chicken juices run clear. Drizzle with lemon juice.
Delicious. And so so easy. Seriously. I don't even know how to conclude this besides delicious. So there you have it. You need dinner tonight? This one is a good one. Oh and I should mention that the nice part of this meal is that you can make as much as you want. Pull out two chicken breasts if there's two of you, pull out one if you are cooking for one. I highly recommend buying chicken breast when it's on sale then wrap them individually in wax paper and put them in a freezer bag that way you can pull out how ever much you want. Then just scale the recipe to however much you're making. Okay, now we are ending in delicious.
