On the Kid's Table: Homemade Poptarts

I'm always looking for new ideas of food to feed Addison. We were in a breakfast rut, so I decided to try something new. And since I like making things the newest thing was homemade poptarts, of course.

Here's What You Need:
1 1/2 cups strawberries, chopped
1/2 cup sugar
1-2 tablespoons of honey
splash of milk
Homemade or store bought pie dough

--Home Pie Dough--
1 1/4 cup all-purpose flour
1/4 teaspoon salt
1/3 cup shortening
4-5 tablespoons water, divided

--Icing--
1 egg white (from pasteurized eggs)
1 1/4 cups sifted powdered sugar
1 teaspoon vanilla extract

Here's What You Do:
--Homemade Pie Dough--
In a medium bowl, stir together flour and salt. Using pastry blender, cut in shortening until pieces are pea size.

Sprinkle 1 tablespoon col water over part of the flour mixture; gently toss with a fork. Push moistened dough to one side of the bowl.

Repeat moistening flour mixture, using 1 tablespoon at a time, until all the flour mixture is moistening. Form pastry into a ball.

On a lightly floured surface, roll dough out.

--Poptarts--
Preheat oven to 350 degrees. Line baking sheet with parchment paper and set aside.

Combine strawberries, sugar and honey with a splash of water into a saucepan. Heat over medium heat while stirring and mashing until filling has thickened (for 20-30 minutes). Allow your filling to cool completely.

Roll pie dough on a lightly floured surface until desired thickness is achieved.

Cut rectangles 3x4-inches out to make poptarts. Roll excess dough and re-cut if necessary. You will need two rectangles to make one poptart.

Place one row of rectangles down on baking sheet.

Spoon approximately 1 tablespoon of strawberry filling onto the center of each rectangle, making sure to spread only slightly.

Carefully, with a pastry brush or your finger, brush milk onto edges of dough. Lay the second rectangle over the top and press down with your fingers along the edge to close poptarts.

Using a fork press the back of a fork along all teh edges to completely seal poptarts.

Cut a few tiny silts in the top of each poptart.

Bake until golden brown, for 25-30 minutes.

Place poptarts on wire racks and allow to cool completely.

To make icing, beat egg on medium-high speed until light and frothy. Add powdered sugar gradually while mixing. Add vanilla and continue mixing until fully blended.

Frost your homemade poptarts and top with sprinkles if desired.








Well, they were easy to make and they were quite delicious. Addison liked them but she was more in the group of she could take or leave them. Rob, however, loved it. So that's something at least.

I don't know what to say. They were homemade poptarts and that was about it. I do recommend making things yourself. They tend to be healthier and you know exactly what's in them. It takes some getting used to and you have to take any preconceived of that food out of your head because it's likely going to be very different, but it's still delicious.
