Not my cup of tea. But Rob really enjoyed them. So here it goes:
Ingredients:
1 tbsp sour cream
1/4 to 1/2 tsp salt
1/4 tsp curry powder
1/2 tomato
1 tsp thyme
2 zucchinis
1 onion
cheese
pepper
(Optional: bacon)
Directions:
Preheat oven to 400 degrees.
Cut the zucchini lengthwise and scoop out the middle. Put on a lightly buttered pan.
Saute the onions in 1 tbsp of butter or oil until soft. Add curry powder and cook for 30 more seconds.
Chop up tomato and zucchini and combine in bowl. Add onions, sour cream, salt, pepper and thyme. Mix them together.
Fill zucchini boats with the mix then top with cheese. Then put in oven to cook until cheese is melted.
We actually started this on Tuesday and when I we I really mean Rob because I was having a bad day and didn't want to cook but the meal took at least 20 minutes to cook and it was already 7pm and I was hungry. So we decided to wait until another evening (last night to be more exact) to finish this mean. So all this means that on Tuesday when he started all this I have no pictures. But I think you can imagine cutting a zucchini lengthwise and scooping out the middle then cut up that part and mixing with some tomato and then cutting up some onion.
They weren't exactly the prettiest thing ever. In fact they look a little gross to me. But Rob was a big fan. He loves zucchini so naturally it was a win for him. I however didn't really care for it. You win some, you lose some. This one was a mix of success and failure. Everything went good with cooking and Rob liked them but I just didn't care for the taste.
I might have been uninterested but Stella certainly wasn't. She jumped up on the back of the couch and looked over the mini wall while we ate. I knew she liked chicken but didn't realize she was such a fan of zucchini.
