How to Boil Water: Smoked Sausage-and Vegetable Pile Up

Hey I'm cooking again! Who's excited about this? I know the hubs is. We love smoked sausage and vegetables who what could be better than a smoked sausage and vegetable pile up. Although Rob doesn't remember, we have had it before last night. So to him it was the first time, so why not share it on 'HtBW?' It's an easy and very summery meal. So I hope you definitely try it this summer. It's delicious!

Ingredients:
Cooking spray
7 ounces smoked turkey sausage, diagonally sliced (I just used smoked sausage not turkey sausage but to each his own. Plus instead of just using half of the smoke sausage which would be 7 ounces, I used all 14 ounces because we like smoke sausage.)
1 cup refrigerated prechopped onion
1 cup refrigerated prechopped tricolor bell pepper (I also didn't use tricolor bell pepper because I don't care for bell peppers. Again to each his own. If you would like it then by all means add it in.)
1 cup refrigerated presliced zuchhinni (I used a little more zucchini because we liked zucchini too.)
1 (20-ounce) package refrigerated garlic mashed potatoes
2 cups frozen whole-kernel corn

Directions:
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage; saute 2 minutes or until browned. Remove from skillet; keep warm.

Return pan to heat; coat with cooking spray. Add onion, bell pepper, and zucchini. Coat vegetables with cooking spray; saute 5 minutes or until tender and beginning to brown.

While vegetables cook, heat potatoes according to package directions.

Add corn and cooked sausage to onion mixture. Saute 4 minutes or until thoroughly heated. Serve sausage mixture over mashed potatoes.


Sorry I have no other pictures of the process. It's just so easy. And quite good. I highly recommend this meal if you need something to eat on a hot summer day that's really easy. I'm just happy to be back to cooking. I didn't really realize how much I missed it, and at least for the time being I'm happy to be back cooking. I hope you try and enjoy this meal.
