How to Boil Water: Greek Salad Sandwiches

This has quickly become a go-to meal for us. It's easy. It's filling. It's delicious. We love it. And now I'm going to share it with you because it's mean to keep this recipe all to ourselves.

Dinner Brought To You By: Every Day with Rachael Ray - March 2013

Here's What You Need:
1/2 cup crumbled feta
1/4 cup mayonnaise
2 tsp. red wine vinegar
1/4 tsp. dried oregano
6 slices bread
1/4 lb. sliced turkey
1/4 cucumber, sliced
2 tsp. black olive tapenade -- We usually skip this one. We've had it before and it's honestly not bad but we just usually mess with it, but feel free to enjoy all the black olive tapenade you want!
1 tomato, sliced
1/4 red onion, thinly sliced
4 leaves bibb lettuce

Here's What You Do:
Mix feta, mayonnaise, vinegar, and oregano. Spread some onto 1 piece of toast, top with half of the turkey and cucumber. Stack with another piece of toast; spread with 1 tbsp. tapenade. Top with half of tomato, onion, and lettuce. Spread some feta mixture onto another piece of toast; close sandwich. Secure with toothpicks. Repeat with remaining ingredients.






It's hard to believe that it is really just that simple. I know. But it's true. This recipe only makes two servings so make sure if you are making it for more you make more feta mixture. I doubt you will need to eat more than one despite how much you might want a second one because it is surprisingly filling, just keep that in mind. It's super easy and super delicious. This is one you should definitely try. It's great for nights when you don't have a lot of time but are wanting something a little healthier than grabbing something out.
