Here's What You Need:
8 slices of bread from an artisan style load - I used that Sara Lee Artisan bread, wheat this time
Butter for spreading
Tomato paste
Shredded cheddar cheese
Shredded mozzarella cheese
Thinly sliced pepperoni or chorizo
Red Bell pepper, chopped into small chunks
Mushrooms, chopped into small chunks
Scallions, chopped
Parsley, chopped
You might noticed I didn't put any measurements on any of these except for the bread which is two slices per person to make a sandwich. The rest I think is up to you how much you want. The original recipe was for only one person and didn't have mushrooms. So I added on to feed my whole family and I added the mushrooms because we love mushrooms.
Here's What You Do:
Butter one side of four slices - this will be the top of the grilled cheese. Put to one side.
Place the remaining slices of bread on a tray and place under the broiler. Toast on both sides until lightly browned.
Spread the tomato paste on the two slices of toast, then top both slices with the cheddar and mozzarella.
Arrange the pepperoni, peppers, and mushrooms on top.
Place back under the broiler to melt the cheese. Put the buttered bread under the broiler at the same time, and toast on both sides.
When the cheese has melted and the pepperoni is bubbling, remove from the tray and place on a plate. Sprinkle both sides with scallions and parsley. Add the buttered toast on top. Serve immediately.
Okay I'm just going to say right off that this sandwich was seriously delicious!
Addison wasn't sure at first. Basically she took a bite of bread then decided she didn't like it. We made her try it again and turned out she liked it. I couldn't Connor to try it - we are going through a stubborn food stage.
We loved these. They were easy to make and just delicious. I highly recommend these for a quick easy dinner or even a summer meal because who doesn't love a light, easy summer meal. Of course fall is coming so now is a horrible time to discover a perfect summer meal, but oh well better to find such a good meal now than never, right?
