So I have been having some trouble figuring out what to eat for lunches lately. I just don't know what to eat, but I'm trying now some meal prep meals that I make at the beginning of the week and eating all week long. I have always stayed away from these because that just means more cooking or prepping and a lot more cleaning. But I've been so stuck lately that I'm willing to try anything.
So because I'm giving some of these meal prep ideas a try I thought I would share the ones that I liked that I think is worth passing along. So today is officially the first meal prep blog post about Lo Mein that I gave a shot last week.
Yield: 4 servings (however I don't eat that much during lunch so I actually had 6 days worth)

Here's What you Need
8 ounces whole wheat spaghetti
1 tbsp olive oil
3 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 red bell pepper, julienned
1 carrot, julienned
1 cup snow peas
3 cups baby spinach, chopped
1/2 tsp sesame seeds
-- For sauce --
2 tbsp reduced sodium soy sauce, or more, to taste
1 tbsp freshly grated ginger
1 tsp honey
1 tsp sesame oil
1/2 tsp sriracha, optional
Here's What You Do
In a small bowl, whisk together soy sauce, ginger, honey, sesame oil, and sriracha, if using; set aside.
In a large pot of boiling water, cook noodles according to package instructions; drain well.
Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper, and carrot. Cook, stirring frequently, until tender, about 3-4 miutes. Stir in snow peas and spinach until spinach has wilted, about 2-3 minutes.
Stir in spaghetti and soy sauce mixture and gently toss to combine.
Place in meal prep containers, garnish with sesame seeds, if desired.
Of course as I expected there was quite a bit of prep work that went into this, but it was actually really easy. Just a lot of cutting then a bit of cooking and it was done. I enjoyed this quite a bit. I definitely wouldn't eat it past 6 days because either I lost a taste for it or it was just at the end of the life. But it was enjoyable to eat during the week and pretty easy to put together.
I don't have meal prep containers so mine went all into one bowl. To make it even easier I want to start looking into meal prep containers because then all I have to do is grab that container and heat it up.
But this is definitely worth trying out if you are looking for some meal prep ideas. I have another one to share next week that I liked even more and is definitely worth a try.
