A Week of Meals

Monday: Carbonara with Spring Onions & Peas + Bread


This one was a new one for us. I don't think I actually got the right noodles for what the dish called for but these worked just fine. The kids were fans of it, but Rob and I actually liked it quite a bit. Plus it was pretty to make and I like easy these days.

Tuesday: Baked Chicken 'n' Butter and Cream + Veggie + Leftover Bread



This meal truly looks a little sad and pathetic in this picture but it is good. I don't know what it was this time but it wasn't as good as it's been in the past. But it was still good. This one is pretty simple too but it does take a bit in the oven so time is the biggest issue with this meal.

Wednesday: Chicken Parmesan + Spaghetti + Breadsticks



This one was a Rob meal. Addie had dance so he made dinner for us and he did a pretty dang good job. The kids scarfed it down which means any meal successful!

Thursday: Ranch Pork Chops and Potatoes Sheet Pan Dinner + Crescents


The first time we had this meal it was seriously delicious (and I'm not a pork eater) but I did something different this time. I think my biggest mistake was using thin sliced pork chops which meant they finished cooking between the potatoes so the pork was overcooked. So yeah that was a major bummer. But it was edible still.

Friday: Homemade Pizza


We love our old stand-by pizza. I make the crust and sauce and I use fresh mozzarella - which there is no other way to go with homemade pizza but fresh. I've been making it the same way for years and I'll continue to make it the same.

Saturday: Cheesy Smoked Sausage & Pasta Skillet + Crescents


We have this one a lot. The kids love smoked sausage so we eat it a lot. I don't necessarily love it by itself but I like it cooked in with other things like this past meal or this other orzo dish I make. Connor had two helpings which is definitely a sign of how much he likes it (he never has seconds unless it's meatballs).

Sunday: All American Hamburgers + Twice Baked Potatoes


This is another one I have been make for years now. These burgers are simple yet delicious. I usually just either buy fries or make homemade ones, but I decided to go with these twice baked potatoes for something different. I'll admit I have a twice baked potato casserole that I thought I was planning for but apparently not. These were still delicious and the kids liked them.


This week was supposed to be all at home with no dinners out before all this hit. But I have definitely been planning a little differently moving forward. We have a couple weeks of stored food - which is new to me because I purely shop week to week and don't keep a stash. But we are continuing to weekly shop in order to save our stash in case everything completely shuts down. There are a lot of unknowns out there.

We are also choosing not to eat out at all including pizza - which makes me a bit sad because I could use a day off of cooking. But until the worse of this is past this is just what we are doing. Like I said there are a lot of unknowns and one of those essentials things that has to keep happening is eating. We are lucky enough that I already stay at home so if the schools close then we aren't missing income and Rob can work from home. We are lucky enough that we don't have to worry about putting food on the table but that doesn't mean we don't worry about all of this.

What we can do is keep the kids are normal as possible and keep our food as normal as possible. How we handle this is what they see and how they learn to handle situations like this in their lifetime. So we eat normally. We are cautious. We don't take any unnecessary risks because truthfully I don't worry so much about the kids but about who we could give it to. I also worry about the country's reaction and if we can't find food in the stores, we have to be sure we have stuff here.

It's all scary and complicated. Hopefully we will be able to pull through this and get kids back into schools, baseball back on TV, people back to work, and be able to order a pizza again but for now we just eat as normally as we can and do the best we can.

I didn't mean to go into all that at the end of this innocent enough food post but it's been on my mind especially now while my husband is out grocery shopping for me which is usually the tasks I do. But poor man is going out into it all so I don't have to.
