So here we are again with another delicious meal prep meal. This one is probably my favorite, so much so that I'm having it again this week but with some changes. But it's definitely worth having. And I discovered that I really like couscous.

Total Time: 25 minutes
Here's What You Need
2 packages (4.7 oz each) Pearled Couscous Mix Roasted Garlic & Olive Oil flavored
1 English cucumber, coarsely chopped
2 bell pepper (1 red, 1 green, 1 yellow), coarsely chopped
1/2 red onion, chopped
1 cup cherry tomatoes, halved
1/2 cup parsley, finely chopped
2 cans (15 oz each) chickpeas
Feta cheese, to taste
1 lemon, cut into wedges
--Salad Dressing--
1/4 cup red wine vinegar
1/2 cup olive oil
1 tbsp freshly squeezed lemon juice
1 tsp minced garlic
1 tsp dried oregano
1/2 tsp Dijon mustard
Sea salt & freshly cracked pepper
Here's What You Do
Prepare the couscous mix according to package instructions.
While the couscous is cooking, prep veggies. Coarse chop the cucumber, peppers, red onion and cherry tomatoes. Finely chop the parsley.
To take the "bite" out of the raw red onion, you can soak it in cold water (or freshly squeezed lemon juice) for about 10 minutes.
Drain and rinse chickpeas. Roast in oven, if want.
Prepare the dressing by adding all of the dressing ingredients to a mason jar. Seal jar and shake until combined.
Divide the dressing evening into 6 small containers. Divide the couscous evenly among 6 meal prep containers. Add in equal parts all the chopped veggies and chickpeas. Add a lemon wedge, some feta cheese and cover everything with salt and pepper. To enjoy, add the dressing, squeeze the lemon over everything, stir and eat!
I hadn't gotten my meal prep containers yet so I just combined it all into a bowl together which worked pretty well.
Personally the changes I'm making is one less cans of chickpeas because they just aren't my favorite. But I want to keep them in. I'm also doing one less pepper because three was a few too many for me. I don't know how well the trick about the red onion worked but I did it anyway, and I'll try it again and we'll see how it goes.
